Easy Barley Oven Soup

1 lbs. fresh organic mushrooms, slicedbeef-and-barley-stew-1-R125266-ss

2 large onions, chopped

2 cups organic pearl barley

6 cups organic vegetable broth

½ cup frozen organic peas

Salt and pepper to taste

 

 

 

 


Sauté mushrooms and onions – don’t let onions brown. Mix in barley, salt and pepper. Pour into large casserole dish. Pour in broth. Cover and bake at 375 degrees for 50 minutes, or until barley is tender. Remove from oven and stir in peas. Enjoy!
